I've got Vac, Volts and Amps, I'm about to add Oil pressure, Oil temperature and Water Temperature.
If you're only going for three gauges (and you've already picked one), then for the other two I'd go with oil pressure and either amps or vacuum.
Just make sure that if you do go for an oil pressure gauge that it is an ELECTRICAL one, mechanical oil pressure/temperature gauges are illegal for street use. Once you know how to read a vac gauge properly you'll really love having it.
