I want to replace the head and intake gaskets on my V6 in the EH. Being told it may be the problem im having with it at moment. Also at the same time i will tidy up the wiring in engine bay, paint some of the parts removed but mainly see what the bores and pistons are like. What gaskets will I need to go to the top of the block. Is it just 2 head, 2 rocker cover, and intake gaskets.

Have you done a compression test at all buddy??
Or a cooling system pressure test??
Also pull the radiator cap and start the car checking for bubbles in the radiator.

Sounding like crap at start up, just not sounding right in general. Using water and getting hot, its only to keep the motor going until i have the money to put an 8 in her

A VRS (Valve Regrind Set) gasket kit will give you all the gaskets needed for the job and usually cheaper than individual gaskets.
Try and get ACL gaskets also.

As many will tell you, the V6 heads are prone to cracking. Unsure if there's a specific technique on how to remove them. The gasket sets you should have are the head gaskets (block to head) plus an intake manifold set. This consists of the intake manifold gaskets, the thermostat housing, and the water jacket housing. The latter is very important to get right. If you don't it can cause an "initially unexplained" coolant leak. They tend to leak down the back of the intake manifold gasket, and you will have to keep adding coolant almost every day until it's fixed. It's happened to me personally.

Also, it would be a good idea to get some new o-rings for the fuel injectors, Check the condition of them when you disconnect the fuel line, but at $2 apiece, it's something worthwhile doing to save you some aggro later.

There are also some core plugs at the back of the block. I'm not saying replace them necessarily, but check to see if they're ok. Because you have to take off things like the starter motor and the exhaust manifolds to get at them, they're often overlooked
